A Classic Baked Sweet Potato

You know how sometimes you don’t eat something for awhile and then you eat it and you remember how much you enjoy it? Well I’m going through that with baked sweet potatoes. I’ve been making them often and they are so good. Skin and all! Of course I add butter and brown sugar but what other way do you even eat it?

What You Need:

4 sweet potatoes (wash, dried and unpeeled)

4-6 tablespoons of Olive oil

Salt

Unsalted butter and brown sugar for after baking

Steps:

1. Preheat oven to 400 and line a cookie sheet with foil.

2. Rub about 1-2 tablespoons of olive oil onto each of the sweet potatoes. Next, lightly salt each sweet potato.

3. After the sweet potatoes have been rubbed with olive oil and salted you’re going to take a fork and jab it a few times into each sweet potato. 4-5 jabs in each.

4. Bake for 50 minutes or until a fork can be poked through smoothly.

5. Once done, slice each sweet potato and top with unsalted butter and brown sugar. Serve immediately.

So yummy! The skin is even delicious!

Peppered Sweet Corn

What You Need:

2 bags of 12oz frozen corn

1 cup of milk or heavy cream

(I have tried both ways. If I don’t have heavy cream I just use milk. Heavy cream will make it thicker and provide a subtle change in taste)

1 teaspoon of pepper

1/2 teaspoon of salt

1/4 cup of sugar

8oz package of cream cheese

1 stick of unsalted butter

Steps:

1. In a medium sauce pan on low medium heat begin to melt the butter with the corn. Then add your heavy cream and cream cheese.

2. Once the cream cheese and butter are completely melted add the sugar, pepper, and salt.

3, Allow to simmer for 8 to 10 minutes. Adding more salt and pepper if necessary. Serve warm.

A yummy side for holidays, potlucks, or some delicious ribs.

Roasted Sweet Potatoes With Raw Honey

What You Need:

4 sweet potatoes cut into cubes with skin

1/4 cup of raw honey

Salt, pepper, and cinnamon for seasoning

Olive oil (3-4 tablespoons)

Steps:

1. Lay out foil (optional) on a baking sheet. Scatter your sweet potatoes and drizzle on the olive oil and honey. Season the potatoes with the salt, pepper, and cinnamon.

2. Mix it all together and ensure all the potatoes are evenly coated with the oil, honey, and seasonings.

4. Bake at 375 for 30 to 45 mins.

Pairs so deliciously with chicken breasts covered in a hearty pesto sauce! Trust me!
