Sweet Knots With Brown Sugar OR You Can Use Nutella

Servings: 14-16 knots

What You Need For The Rolls:

3 1/2 cups of all purpose flour plus more for dusting

4 tablespoons of salted or unsalted butter at room temperature

1 cup of warm milk

3 large eggs

1/2 teaspoon of salt

2 tablespoons of light or dark brown sugar

1 packet of active dry yeast

What You Need For The Cinnamon Filling:

1 cup of brown sugar

1 tablespoon of cinnamon

6 tablespoons of butter softened

Or Substitute cinnamon filling for Nutella

Warning: using Nutella does get messy but trust me, it’s worth it.


Steps:

1. In a medium/large mixing bowl mix the 1 packet (2 1/4
teaspoons) active dry yeast with the warm milk and the brown sugar. Let sit 5-10 minutes, until bubbly and foamy.

2. Add 3 ½ cups flour, salt, eggs,
and butter. Mix until the flour is completely
incorporated, adding a little extra flour if necessary. (I knead by hand for a good 10 mins and it works fine.)

3. Cover the bowl and let sit at room temperature
for 1 hour.

4. In the meantime prepare your filling. In a small bowl, combine 1/2 cup brown sugar and 1 tablespoon cinnamon.

5. Once dough is ready on a floured surface roll the dough out into a large rectangle, adding flour as needed. Spread the dough with 5 tablespoons softened butter and sprinkle with cinnamon sugar mixture.

6. Fold the dough in half. Cut into 12-14 strips. Twisting each strip into a loose imperfect knot. Placing each knot onto a cookie sheet pan lined with parchment paper.

7. Bake at 375 until a little golden on the top. Eat as is or with your favorite homemade icing.

The Best Way To “Malt O Meal”

What You Need:

1 cup of milk

A pinch of salt

3 tablespoons of malt o meal

1 tablespoon of unsalted butter

2-3 tablespoons of maple syrup

Fresh strawberries

Chia seeds (optional)

Steps:

1. In a small pot bring together the milk, malt o meal and salt. Bring to a low medium heat, it will begin to bubble. Continuously stir for 3 to 5 mins.

2. Add the butter, maple syrup, and fresh berries. Enjoy!

My husband loves when I make this for him.

Muffin Frittatas

Servings: 12 muffin frittatas

What You Need:

8 eggs

1/2 cup of whole milk

4-5 pieces of chopped deli meat

1/3 cup of Parmesan cheese

1/4 teaspoon of salt

1/2 teaspoon of pepper

1-2 tablespoons of fresh parsley chopped

Steps:

1. In a medium size bowl whisk all ingredients together.

2. Spray a muffin tin pan with cooking spray and pour egg mixture into pans evenly.

3. Bake at 375 for 15 to 20 mins until slightly bubbly and a little golden on top.

Enjoy! Great to get your kids involved in and also kid approved. I like to enjoy these with a little salsa or hot sauce as well.

Banana Cream Cheese Muffins or Bread

This recipe can be used to make a banana bread loaf or banana bread muffins! If you choose to make banana bread instead of the muffins I would suggest sprinkling a little brown sugar right on top before baking! It provides a sweet crusty top!

What you will need:

2 to 3 very ripe bananas

1 8oz package of cream cheese

1/2 cup of unsalted melted butter

3/4 to 1 cup of sugar

A pinch of salt

1 teaspoon of baking soda

1 teaspoon of vanilla extract

1 1/2 cups of flour

1 beaten egg

Brown sugar for sprinkling on top before baking (optional)

Steps:

1. In a medium bowl mix together with an electric mixer the bananas, cream cheese, and melted butter.

2. Next add the sugar, salt, and baking soda.

3, Then add vanilla extract and the beaten egg.

4. Last, add your flour and mix well.

5. What you want to do now is butter your muffins tins and pour batter into the tins. Distributing equally. (If making banana bread loaf sprinkle a little brown sugar and pat into bread *optional*)

6. Place in oven at 350 for 12-15 mins. Oven time may vary. Be sure to check on them. They are done when the tops are little golden.

*if baking a banana bread loaf bake at 350 for 45 to 50 minutes or until a toothpick or butterknife comes out clean*

Serve warm with butter! So good!

Peanut Butter Cookies With 5 Ingredients

Btw, these are flourless!

Warning: these 5 ingredient peanut butter cookies are highly addicting! And honestly, I don’t really feel guilty eating them!

Servings 16-18 cookies (tip: use a tablespoon measuring spoon to scoop to make the perfect size)

What you need:

1 cup of natural peanut butter

1 cup of sugar

1 teaspoon of vanilla extract

1 large egg beaten

Salt for sprinkling (coarse sea salt would be ideal but table salt is okay too!)

Steps:

1. Preheat oven to 350

2. Mix all ingredients in a medium size bowl.

3. Scoop tablespoon size balls, roll into ball, and place on cookie sheets lined with parchment paper.

4. Use a fork to flatten the cookie, making a crosshatch pattern.

5. Bake for 8 to 10 minutes and sprinkle with salt.

Yummy Avocado Smoothie – Nutritious And Creamy

Who doesn’t love avocados! (Yes, I know guac is extra)

They are a super food and delicious! Loaded with vitamins and considered a “healthy fat”.

Typically when I eat an avocado I just scoop it out, slice it up, and put some salt on it. Good enough for me!

The thought of adding an avocado to a smoothie was intriguing but I never thought to try it until now!

Well, let’s just say it was super TASTY and even my kids loved it. That says a lot since they are picky.

Yummy Avocado Smoothie – Nutritious And Creamy

Servings: 1 to 2 smoothies

What You Need

  • One whole small ripe avocado
  • One whole banana- preferably with a few brown spots
  • 3/4 cup Coconut milk
  • 1 tablespoon of honey
  • 1/2 cup crushed ice
  • Chia seeds (optional)

Steps:

Combine all ingredients and blend in blender until creamy.

(1-2 tsp of chia seeds can be blended in or you can sprinkle on the top once you pour the drink into a cup- as seen in the picture above or below)

Mama’s Summer Sun Tea

When I think of summer time, I think of long sunny days. Living in Arizona, I think of long sunny REALLY HOT days lol.

But what’s great about these summer days is they are perfect for making sun tea. One of my favorite drinks to sip during these blazing hot days. I remember my mom making sun tea when I was a kid, and now I have a husband who requests this sun tea constantly.

My daughters enjoy this tea too. So you could say it’s husband and kid approved. However I don’t let my kids drink too much of it because of the caffeine. They have enough energy!

Now let’s make some of Mama’s Summer Sun Tea!

WHAT YOU NEED:

A large glass jar or pitcher that can hold 14 1/2 cups of water

4 teabags of Lipton- iced tea 100% natural specially blended for ice tea (24 family size tea bags)

1 cup of sugar (not Splenda or any “healthy sugar”, just sugar!)

Fill up a large GLASS jar with lid of 14 1/2 cups of water. Then place outside all day in direct sunlight. I typically leave my jar out from 10am to 7pm. Remove tea bags, and add 1 cup of sugar into tea and mix. Let chill overnight, THEN ENJOY!

You can even get more creative and add sliced lemons, fresh raspberries, or peaches to the tea. You can leave it unsweetened too if you prefer. This is the way we enjoy it and it’s always a treat!
