Avocado Toast With Pan Roasted Grape Tomatoes And A Fried Egg

Servings: 1 piece of toast

What You Need:

A piece of hearty multigrain bread

1 small ripe avocado

A small handful of grape tomatoes cut into halves

Salt, pepper, and rosemary for seasoning

1/2 tablespoon of minced garlic

1 Tablespoon of Olive oil for cooking the tomatoes

Cooking spray for the egg

Steps:

1. Heat up a small skillet on a low medium heat. While that is heating up slice open your avocado and smash it into a bowl seasoning it with salt and pepper.

2. Throw the tomatoes on the skillet in the olive oil and garlic. Sauté until soft. Set aside.

3. Spray the pan with cooking spray leaving behind a little bit of the leftover olive oil and garlic from the tomatoes and begin cooking your egg seasoning it with salt and pepper.

4. Place bread in toaster. (This is where you gotta move fast.)

5. Once the toast pops, smear on your avocado, place the roasted tomatoes right on top, place your fried egg gently on top of the tomatoes, season with some rosemary.

I love a yolky egg.

Lavender Simple Syrup – Mix It In Everything

This lavender syrup is so good. Mix it in your lemonade, your favorite cocktail, a mimosa, raw honey, cream cheese frosting, the possibilities are endless!

What You Need:

1 1/2 cups of water

3 tablespoons of dried lavender

1 1/2 cups of sugar

Steps:

1. Bring the water and lavender to a boil.

2. Add the sugar and mix until it dissolves completely. Allow to simmer for 15 mins. Boiling lightly.

3. Remove from the heat and let sit for 2 hours. The aroma is so relaxing.

4. Strain the liquid into a mason jar discarding the dried lavender. Store in the fridge for 2 weeks.

German Pancakes With Powdered Sugar And Honey

Servings: 2 large German Pancakes

What You Need:

4 eggs

1 tablespoon of sugar

1/2 teaspoon of salt

2/3 cups of flour sifted (I used a small strainer and it works just fine)

2/3 cup of milk

2 tablespoons of soft butter

2 tablespoons of powdered sugar and honey for drizzling (optional)

Would also be great with some fruit compote, maple syrup, or baked apples with cinnamon

Steps:

1. Heat oven to 400 and butter the cake pans well.

2. Best eggs well, and then add remaining ingredients.

3. Once mixed well pour evenly into the two cake pans.

4. Bake for 20 mins at 18 mins. Then open oven to release some heat and turn down to 350. Bake an additional 8 to 10 minutes or until golden brown.

Enjoy!

If it begins to expand in the middle that’s fine! It will go down some when it comes out and will still be delish!
When I took it out this is what I looked like.
Honey and powdered sugar is usually are go to but you can get really creative with it!

Muffin Frittatas

Servings: 12 muffin frittatas

What You Need:

8 eggs

1/2 cup of whole milk

4-5 pieces of chopped deli meat

1/3 cup of Parmesan cheese

1/4 teaspoon of salt

1/2 teaspoon of pepper

1-2 tablespoons of fresh parsley chopped

Steps:

1. In a medium size bowl whisk all ingredients together.

2. Spray a muffin tin pan with cooking spray and pour egg mixture into pans evenly.

3. Bake at 375 for 15 to 20 mins until slightly bubbly and a little golden on top.

Enjoy! Great to get your kids involved in and also kid approved. I like to enjoy these with a little salsa or hot sauce as well.

Batter For Waffles Or Pancakes

This batter is delicious. Works great for pancakes OR waffles. Whatever you and your family are in the mood for!

This batter is good for 3 days in the fridge. What you can also do is make ahead and then freeze. Great for school mornings. Just pop the waffles in the toaster!

Quantity: Makes about 8-10 waffles or pancakes. We are a family of 5 and we usually always have leftover batter.

What You Need:

2 cups of all purpose flour

1/4 cup of sugar plus a few dashes of cinnamon

1 teaspoon of salt

1 tablespoon of baking powder

2 teaspoons of baking soda

2 cups of milk

1/2 cup of vegetable oil plus 2 tablespoons

2 eggs

(Unsalted for butter for pan or waffles maker)

Steps:

1. In a medium size bowl add flour, salt, baking powder, baking soda, cinnamon and sugar. (Dry ingredients) mix and set aside.

2. In a different medium size mixing bowl mix together the milk, vegetable oil, and eggs. (Wet ingredients)

3. Add wet mixture to dry mixture and mix well. Set aside for 25 mins.

4. If you are making pancakes: add 1 tablespoon of butter to pan until melted. Add a ladleful of batter to skillet. When batter begins to bubble flip over pancake until both sides are a golden brown color.

If you are making waffles: spray your waffle maker with a vegetable oil spray. Add a small ladle size of batter to waffle maker. Careful not to add too much otherwise it will spill over. Press waffle maker until light turns green or a nice golden color.

Serve with fresh fruit and maple syrup or a type of fruit compote with whip cream. yum!

Eggless Pancakes

Sometimes you want to make pancakes only to realize you don’t have any eggs! Which is exactly what happen to us. However delicious pancakes are still achievable even if you don’t have any eggs!

What You Need:

  • 1 Cup All Purpose Flour
  • 1 Teaspoon of Sugar (give or take, I add a little more)
  • 1/4 Teaspoon Ground Cinnamon

  • 1 Cup Milk ( 2%)
  • 1 Tablespoon Vegetable Oil
  • 1 Tablespoon Water
  • 1 Teaspoon Vanilla Extract
  • 2 Tablespoons Unsalted Butter

Steps:

  1. Whisk together the flour, sugar, cinnamon, baking powder, and salt. (The dry ingredients)
  2. In a small bowl whisk 1 cup milk, the vegetable oil, water and vanilla extract. (The wet ingredients)
  3. Stir in the wet ingredients to the dry ingredients. Set aside.
  4. Heat a skillet at a low medium heat. Once the pan is hot add the unsalted butter and let it melt.
  5. Add the melted butter to the batter and return the pan to the stove. Mix the butter into the batter well.
  6. When the pan is hot enough, pour a small ladleful of batter on the pan for each pancake. Cook until bubbles appear on the face of the pancake.
  7. Carefully flip the pancake and cook until golden brown on both sides.

Sidenote: keep your skillet on medium LOW. These do cook fast and can easily burn if the pan is too hot.

Breakfast Zucchini Bread

This bread is easy to make and super tasty. A yummy quick breakfast treat, but hey, if you want to have this for lunch or dinner I won’t judge!

Is best served warmed up with unsalted butter! Enjoy!

Breakfast Zucchini Bread

(This is called ‘Breakfast Zucchini Bread’ because it’s best to make in the evening and allow to sit overnight.)

Makes one small 8 x 4 loaf

Bake at 350 for 50 minutes or until toothpick comes out clean.

What You Need:

1 large zucchini or 2 small ones finely shredded

1 beaten egg

1 1/2 cups of flour

1 teaspoon cinnamon

1/4 teaspoon plus a sprinkle of nutmeg

1/4 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup of sugar

1/4 cup of vegetable oil

Steps:

1. In one small bowl whisk together the flour, salt, baking powder, cinnamon, nutmeg, and baking soda.

2. In a separate medium/large size bowl mix the beaten egg, sugar, vegetable oil, and shredded zucchini with an electric mixer.

3. Begin adding the dry ingredients (the flour and spices) to the wet ingredients (the egg and oil) slowly till batter is consistent.

4. Generously butter up the loaf pan and pour batter into pan. Bake at 350 for 50 minutes or until toothpick comes out clean.

5. When bread is complete, allow to cool completely. Cover and let it sit overnight.

And then, enjoy for breakfast!

Mix all the dry ingredients in separate bowl.
Then, mix your wet ingredients.
Combine flour mixture and zucchini mixture together and bake at 350.

Saturday Morning French Toast

What You Need:

1 loaf of French bread (Vienna bread is tasty with this recipe as well) cut in 1/2 inch slices

1 cup whole milk

2 tablespoons of sugar

2 teaspoons of vanilla extract

2 tablespoons of unsalted butter

4 beaten eggs

Cinnamon sugar spice, fresh fruit, and pure maple syrup for finishing – OPTIONAL (but truthfully, makes a huge difference!)

Steps:

1. Heat skillet to medium-high heat.

2. In a shallow bowl combine beaten eggs, whole milk, vanilla extract and sugar. Dip bread slices into egg mixture and allow a few moments to absorb the mixture on both sides of each slice.

3. Melt 1 tablespoon of butter on a hot skillet and begin your first batch of bread slices. 2-3 minutes on each slice of bread until golden.

4. Repeat step 3 with remaining butter and bread slices.

While warm spread softened butter on French toast. Sprinkle cinnamon sugar and serve with pure maple syrup and fresh fruit.

Step 1: Fill a small to medium size pot of water, then, place desired amount of eggs into water. Turn stove top to medium high (to about a 7 or 8 on stove)

Step 2: When water comes to a rolling boil, turn heat down to medium (About a 5 or 4). You want to keep the rolling boil going but you don’t want it to be an aggressive boil. Set timer for 18 minutes.

Step 3: Once the timer goes off remove pot from stove immediately and place eggs into an ice bath (a bowl of water with ice). Let sit for about 5 to 10 minutes.

After removing from ice bath, cut in half, and your eggs should look like this.

PERFECT AND DELICIOUS.

What You Need For Oatmeal Streusel Topping:

3 tablespoons of brown sugar

1/4 teaspoon of cinnamon

A dash of nutmeg (optional)

2 tablespoons of butter

3-5 tablespoons of rolled oats (if you don’t want to use oats you can use flour)

Steps For Muffins:

1. Combine flour, sugar, salt, and baking powder in large mixing bowl. In another small mixing bowl combine beaten egg, milk, and oil.

2. Make a well in the middle of the flour mixture and then add egg mixture. Mix until completely combined. Then add fresh blueberries to mixture.

3. Spoon batter into muffin tins, then sprinkle streusel topping on muffins. Bake at 400 for 15 to 18 mins.

Serve with softened butter. Absolutely delish.

Steps For Oatmeal Streusel Topping:

Combine the oatmeal, brown sugar, cinnamon and nutmeg in a small bowl. Add butter until the mixture becomes crumbly. Sprinkle onto muffins before baking.
